A butcher block counter is the only surface in the kitchen that keeps changing after installation. Maple ambers. Walnut lightens. Knife marks accumulate wherever people actually cut, which is never the whole run. Ten years in, a well-kept top is not the top that was installed, and that is either the appeal or the problem depending on who is standing in the kitchen. What is not optional is the maintenance, and in a climate this humid, with water this hard, the maintenance is specific. This is what the decade actually looks like.
Scope of work
Maintenance splits by finish, and that decision is made at installation. An oiled top gets flood coats of food-safe mineral oil or an oil and beeswax blend, wiped back after soaking, repeated until the wood stops taking it, then repeated on a schedule that starts frequent and stretches out as the wood saturates. A hardwax oil top is cleaned with a compatible soap and re-coated in the worn zones every year or two, buffed thin rather than flooded. A film-finished top, meaning a tung-oil varnish or a conversion varnish, is left alone until the film wears through at the sink and in front of the range, then scuff-sanded and re-coated in that area. Every version needs the same house rules: no standing water, no wet dish rack sitting on the surface, cutting on a board rather than on the counter unless the top was specified as a work surface, and hot pans on a trivet.
Common mistakes
Finishing only the visible face. A top sealed on top and left raw underneath takes on moisture unevenly and cups, usually across the deepest run, and by the time it shows it is a refinish rather than an adjustment. Fastening rigidly. Wood must be held down through elongated slots, figure-eight fasteners or Z-clips that allow cross-grain movement; screws in round holes through a cabinet corner block will win the argument and the wood will crack. Neglecting the sink cutout, where end grain is exposed to the wettest part of the kitchen and needs sealing on every cut surface including the underside. Leaving a square inside corner on that cutout instead of a radius, which is a stress riser. Skipping a foil heat shield above a dishwasher, so vented steam swells the underside of the front edge. And letting maintenance lapse for three years, then discovering that re-oiling a grey, dried-out top means sanding first.
Where the budget goes
Species first, then grain orientation, then thickness. End grain in walnut and edge grain in birch are not in the same conversation. Slab size matters, because a deep island top or a run without a seam has to be built and shipped as one piece. Cutouts add labour: a sink cutout with a radius, sealed on every face, is real work, and an undermount detail is more work than a drop-in. Site conditions move the number too, since scribing to the out-of-plumb walls of an older house takes longer than a clean run between two new ones. Finish choice affects both the install and the decade that follows, because a film finish costs more up front and less in attention.
What gets specified
Species and grain orientation determine how the decade goes. Hard maple is the practical default: dense, closed-pore, low in tannin, and it takes a sanding well. White oak is hard-wearing and beautiful, but it is open-pored and tannic, so it stains black around iron and water more readily. Walnut is softer than it looks and dents. Edge grain, meaning narrow strips turned on edge, is the standard construction and the most stable in a long run. End grain, the classic chopping-block checkerboard, is kindest to knives and self-heals to a degree, but it moves more in thickness and costs considerably more. Face grain shows the widest figure and dents fastest. Bamboo tops are strand-woven and adhesive-heavy rather than solid timber, and they can delaminate where water gets into a cut edge.
What Houston conditions demand
Two Houston conditions do the damage. Indoor humidity swings between a closed, air-conditioned summer and a mild damp winter, and wood tracks that with its own moisture content. A deep counter run gains and loses width across the seasons, which is why a top screwed rigidly to a cabinet frame eventually splits along a glue line, and why a scribe against the wall opens and closes. The second is the water. Houston tap water is hard, so an oiled top around a faucet develops a mineral haze that is not dirt and does not wipe off; it wants a light sanding and re-oiling. In houses with any iron in the water, oak and other tannin-rich species show black spotting where wet metal or standing water sits, which is a chemical stain and goes deeper than a surface mark.
Tomball homes and this work
Tomball has an old railroad town at its center and a large amount of newer development around it, so the work changes within a few miles. Near the historic core you will find older wood-frame homes where systems are the real project — electrical service upgrades, replacing failing supply and drain lines, structural repair — with finishes coming after. Common questions
Can I put a wood counter around the sink?
It can be done, but it is the highest-risk detail in the kitchen and has to be built for it: radiused cutout, every cut face sealed including the underside, a hard film finish rather than plain oil in that zone, a properly tooled sealant joint, and a habit of not leaving water standing. Many people run stone at the sink and wood elsewhere.
How often do I really have to oil it?
An oiled top drinks heavily at first, so frequently for the first several months, then stretching out as the wood saturates. The honest test is water: if a drop beads or sits, the finish is working; if it darkens the wood immediately, that area is due. Hardwax and film finishes are re-coated in worn zones rather than oiled on a schedule.
Will it look terrible in ten years?
It will look used, which is different. Colour shifts, the cutting zone accumulates marks, and the area around the sink works hardest. The advantage over every other counter material is that wood can be sanded back and refinished, so a ten-year-old top can be returned to something close to new without replacing anything.
